Introduction to Culinary Arts
Our culinary program is designed to introduce basic cooking skills that can be developed to produce quality food products. Students will learn fundamentals of cooking and baking through daily assignments and production. All aspects of the industry will be covered including standards and identification of quality meats, dairy products, produce, groceries, frozen foods, and supplies. Methods of purchasing, purveyor relations, heating and holding, proper storage techniques, and purchase standards for convenience foods will also be covered. Weights and measures, safety, sanitation, and personal hygiene will also be taught. Students will prepare meals for the dining room and special events and will discuss theory as well as "back of the house" procedures. They will also be educated in safe food handling practices which will prepare them for the State of California-approved Food Service Manager's Certification test.
The skills learned in this culinary program can be used to create varied cuisines that will train students for the diverse careers available in the culinary industry. Kitchen skills will be honed and developed as they prepare for a future in food services. Upon completion of this program, students will be awarded a certificate as a Culinarian from The At Home Gourmet Kitchen.
Textbooks, uniforms and a cutlery set are all included in the cost of the program.
